Sometimes simple desserts are the best. I recently found an easy-to-make, hundred-year-old recipe for Coconut and Orange Dessert that fits the bill. It is light and refreshing, and is just right on hot summer days.
Here is the original recipe:

And, here is the recipe updated for modern cooks:
Coconut and Orange Dessert
4 oranges
1/3 cup shredded coconut
Peel oranges, and remove white inner skin. Separate oranges into segments, and remove any seeds. Cut each segment into 1-inch pieces. Place orange pieces in a bowl and gently stir in most of the coconut (reserve about 2 tablespoons). Put orange and coconut mixture in serving bowl. Garnish with reserved coconut.
It looks like the perfect summer dish.
This is one half of our family’s traditional holiday fruit salad. Make sure you use sweetened coconut, add pineapple chunks and sour cream, and you’ve got it. I suspect this is just as good.
Isn’t this what used to be called Ambrosia? We had to learn to make it (wow, it was sooo hard, right?) in my freshman Home Ec class.
Yes! A Penn State dining hall fave.
Interesting! Sure omits my favorites, sugar and butter haha. Much healthier!
Nice one! I like the combination of oranges and coconut. π
I love this easy-to-remember recipe. I can do it! YUM!
This is something my mom would make for special occasions. Thanks for reminding me, I should make this.
That looks good and so easy!

Easy, tasty, pretty and refreshing for an anytime treat. Yummy!
My mom made this all the time but added a little powdered sugar as well. She also called it Ambrosia.
A little powdered sugar would be a nice addition.
